Basic BBQ Chicken



Basic BBQ Chicken

Ingredients
1 1/2 cups ketchup
1/2 cup packed dark brown sugar
3 medium garlic cloves, finely chopped
3 tablespoons cider vinegar
3 tablespoon Worcestershire sauce
1 1/2 teaspoons paprika
3/4 teaspoon freshly ground black pepper
1/4 teaspoon celery salt
1/2 cup water

For the Chicken
3 pounds boneless, skinless chicken breasts or bone-in, skin-on chicken pieces
2 tablespoons vegetable oil, plus more for coating the grill
kosher salt 
Freshly ground black pepper

Directions
1. Combine all of the ingredients in a small saucepan over high heat. Bring to a boil, stirring until completely incorporated. Reduce the heat to low and gently simmer until the flavors have mingled and the sauce has thickened enough to coat the back of a spoon, about 30 to 40 minutes.
2. Remove from the heat and let cool to room temperature. If not using right away, cover and refrigerate the barbecue sauce for up to 2 weeks 

For Chicken
1. Heat a gas or charcoal grill to medium (about 350 degrees to 450 degrees) and rub the grates with a bowl dripped in oil. Meanwhile, if you're using chicken breasts (either boneless or bone-in) cut them in half crosswise. Pat the chicken pieces dry with paper towels and place them on a baking sheet. Coat them on all sides with the measured oil, and season with salt and pepper. 
2. When the grill is ready, place the chicken on it (skin side down if using skin on), close the grill, and cook until grill marks appear on the bottom of the chicken pieces, about 5 minutes. Flip the chicken over, close the grill, and cook until grill marks appear on the second side, about 5 minutes more. 
3. Reserve 1 cup of the barbecue sauce in a separate bowl. Flip the chicken again and brush about a quarter of the remaining sauce on the chicken pieces. Close the grill and cook for 5 minutes. Flip and brush the chicken, and continue to flip and brush every 5 minutes, until an instant read thermometer inserted into the thickest piece reads 160 to 165 and the meat near the bone is no longer pink, about 10-15 minutes more (about 25 to 30 minutes total cooking time). Remove the chicken to a clean serving platter and serve immediately, passing the reserved bowl of barbecue sauce on the side

National Waffle Iron Day




Today is National Waffle Iron Day. I love cooking all different types of waffles in various shapes and sizes for breakfast or even breakfast for supper. What is one of your favorite waffle recipe (share below)? I will be sharing one of my favorite waffle recipes. So lets have waffles today in honor of Waffle Iron Day! 




Classic Waffles

Ingredients
2 cups all-purpose flour
1 teaspoon salt
4 teaspoons baking powder
2 tablespoons white sugar
2 eggs
1 1/2 cups warm milk
1/3 cup butter, melted 
1 teaspoon vanilla extract 


Directions
1. In a large bowl, mix together flour, salt, baking powder and sugar; set aside. Preheat waffle iron to desired temperature.
2. In a separate bowl, beat the eggs. Stir in the milk, butter and vanilla. Pour the milk mixture into the flour mixture; beat until blended
3. Ladle the batter into a preheated waffle iron. Cook the waffles until golden and crisp. Serve immediately.

Did you know that in the prehistoric time Inult peoples wore flattened walrus ivory glasses to block harmful reflected rays of the sun? Also the Roman emperor Nero watched gladiator fights through polished gems. It wasn't until James Ayscough before experimenting with tinted lenses in spectacles around the 1752 that sunglasses took it shape.

Cheesy Scalloped Potatoes



Cheesy Scalloped Potatoes

Ingredients
1/4 cup butter
1 1/2 cups onion, diced
2 tablespoon all purpose flour
2 cups whole milk
2 cloves garlic
2 1/4 cups shredded cheese, divided
1/3 cup chives, snipped
4 large yukon gold potatoes, skins on, thinly sliced

Directions
1. Preheat the oven to 375 degrees.
2. Melted the butter in a medium saucepan over medium heat, then the diced onion was cooked in the melted butter until soft.
3. I stirred the flour thoroughly into the onions and added the milk and garlic using a garlic press. 
4. The sauce was stirred over medium/high heat until it began to bubble and thicken.
5. Remove from the heat and stirred in 2 cups of the grated cheese. The sauce was set aside.
6. Spray a 9x9 ceramic casserole dish with some cooking spray. 
7. In a single layer of potato slices with layered in the bottom of the dish, followed by a sprinkling of snipped chives. 
8. Then another layer of potato, followed by more chives. Until the potatoes were used up. 

Crock Pot Corn on the Cob

Ingredients
6 ears corn 
butter and salt etc

Directions
1. Wrap each ear in aluminum foil, season or butter as desired
2. Place in the crock pot, cover and cook on high for 2 hours
3. You can do this without foil. Just grease the crock pot first.

Ingredients
1 medium head cabbage, washed, dried off and shredded very thin
4 tables vinegar
1/4 cup sugar
1/2 to 3/4 cup mayonnaise
salt/pepper to taste

Directions
1. In a large bowl, combine the cabbage, vinegar, sugar and mayonnaise.
2. You may need to mix with hands to blend thoroughly.
3. Season with salt and pepper. Cover and refrigerate for several hours. You could also add a few shredded carrots for eye appeal.

Trisha Yearwood's Bake Beans

Ingredients
1 lbs bacon
1 large vidalia onion; chopped
4 cans (15 oz) pork and beans
1/2 cup dark molasses
1/4 cup light brown sugar; (packed)
2 Tablespoons prepared yellow mustard

Directions
1. Preheat the oven to 350 degrees.
2. Fry the bacon in a large skillet over medium high until crisp.
3. Remove the bacon from the pan, leaving the drippings, and drain it on a paper towels. Crumble and set aside. If you haven't already chop it. 
4. Pour out and discard all by 4 tablespoon of the bacon dripping.
5. Add the onion to the pan and saute until softened, about 7 minutes.
6. Stir in the beans, molasses, sugar, mustard and bacon. Mix well
7. Pour the beans into a 3 quart casserole dish and bake, uncovered for 45 minutes. 

Southern Potato Salad

As we all are planning for our Fourth of July Picnics or Family get together I will be sharing some BBQ recipes to help you out on what to cook.




Southern Potato Salad

Ingredients
2 lbs of potatoes, peeled and diced
7 hard boiled eggs, chopped
1 cup mayonnaise
1 teaspoon yellow mustard
4 Tablespoon of sweet pickle relish 
salt and pepper to taste 

Directions
1. Place eggs in a pan covered with cold water. When the water starts to boil, reduce to a low and simmer uncovered for 1 minute. Remove from heat and cover and let stand for 20 minutes 
2. Peel and dice the potatoes into about 1 inch pieces
3. cover them with water and bring them to a boil for about 15 minutes or until tender. Drain in a colander
4. let the potatoes cool before mixing so they wont crumble. 
5. In a separate bowl, mix the other ingredients together.
6. then add potatoes and mix gently

Stars and Stripes Cookies

Ingredients
1 package (16.5 oz) Nestle Toll House Refrigerated Sugar Cookie Bar Dough, well chilled
all purpose flour 
Cookie Icing (below)


Directions
1. Preheat oven to 325 degrees.
2. Sprinkle flour onto work surface. Roll out dough to 1/4 inch thickness, using additional flour as needed to prevent sticking. Cut into star shapes with cookie cutters. Transfer cookies to ungreased baking sheets with spatula.
3. Bake for 10 -12 minutes or until light brown around edges. Smaller cutters and sharp edges tend to produce darker cookies. Cool on baking sheets for 1 minute; remove to wire racks to cool completely. Pip, spoon or spread red, white and blue icing onto cookies to create stripes. 

For Easy Cookie Icing 

Ingredients
1 cup sifted powdered sugar
1 tablespoon milk
1/4 teaspoon vanilla extract
red and blue food coloring

Directions 
1. add powdered sugar, milk and vanilla extract in a bowl. 
2. Stir in additional milk, a teaspoon at a time, until desired consistency.
3. Set aside one-third of icing. 
4. Divide remaining icing between 2 bowls. 
5. add red food coloring to one bowl and blue to the other; stir well. 

How to Make the Perfect Rice Krispies



How to make the perfect rice krispies. There are tons of recipes out there to make rice krispies either use small marshmallows or big marshmallows. But I find this recipe to be the easiest and they turn out very good. 

Perfect Rice Krispies

Ingredients
6 cups (1/ 1/2- 10 oz bags) mini marshmallows, divided
6 cups Rice Krispies cereal 
3 tablespoon butter

Directions
1. Melt the butter in a large skillet, over medium-low heat.
2. Once the butter is melted, add in 4 cups (1-10 oz bag) of mini marshmallows
3. Melt the marshmallows over low heat, stirring frequently
4. Once the marshmallows are completely melted, add in the cereal 2 cups at a time, mixing well after each addition.
5. Once the cereal and marshmallows are well combined, toss in the remaining 2 cups of mini marshmallows and fold them into the marshmallow cereal.
6. You can keep the heat on low or totally turn it off - it depends if you want the mini marshmallows to melt a little bit or not)
7. Spray a 9x13 baking dish with nonstick spray and transfer the rice krispies treat mixture into the dish.
8. Press the mixture down with your fingertips or you could also use wax paper to press it down firmly into the pan.
9. Allow the mixture to cool before cutting into squares.

National Chocolate Pudding Day



Today is National Chocolate Pudding Day. This must be names girls best friend day since chocolate is a girls best friend. There is so many different types of chocolate milk chocolate, dark chocolate, white chocolate which is your favorite? I would have to say mine would be white chocolate. My monkeys would have to say that it would be milk chocolate through for them. So to celebrate this special day I am going to share a homemade chocolate pudding recipes.



Quick Creamy Chocolate Pudding Recipe

Ingredients
2/3 cup sugar 
1/4 cup cocoa
3 tablespoon cornstarch 
1/4 teaspoon salt
2-1/4 cups milk
2 tablespoons butter or margarine
1 teaspoon vanilla extract
whipped topping 

Directions
1. Stir together sugar, cocoa, cornstarch and salt in a medium saucepan; gradually stir in milk.
2. Cook over medium heat, stirring constantly, until mixture boils; boil and stir 1 minute. Remove from heat; stir in butter and vanilla. Pour into individual dessert dishes. To avoid a skin from forming on top, press plastic wrap directly onto surface; serve warm or refrigerate at least 2 hours. Garnish with whipped topping, if desired. 

This recipe can be cooked in the microwave here is the directions. 

1. Stir together sugar, cocoa, cornstarch and salt in large microwave-safe bowl; gradually stir in milk.
2. Microwave at high (100%) 7 to 10 minutes or until mixture comes to a full boil; stirring every 2 minutes. Stir in butter and vanilla. Pour into dishes and serve as directed above.

"Fried" Pickles with Homemade Ranch



"Fried" Pickles

Ingredients
1 jar pickle slices 
2 eggs 
1/3 cup flour 
1 Tablespoon Worcestershire sauce
1 teaspoon hot sauce
1 teaspoon garlic powder
1 teaspoon Cajun seasoning
1 teaspoon pepper
1 1/2 cups panko bread crumbs

Directions
1. Turn oven broiler on high
2. In a medium bowl, whisk together eggs and flour. Add Worcestershire sauce, hot sauce, garlic powder, Cajun seasoning, and pepper together. Mix well.
3. Place panko bread crumbs in a shallow dish. Dunk each pickle slice into the egg mixture, than dredge it in the panko bread crumbs.
4. Place coated pickles on a rack set above a baking sheet and sprayed with non stick cooking spray. Place pan in the middle rack of the oven. Broil for about 3 minutes on each side. 

What goes best with Fried Pickles is some Homemade Ranch so here is a recipe for Homemade Ranch.


Homemade Ranch Dressing

Ingredients
1 cup Greek yogurt 
1/4 cup milk
1 tablespoon fresh parsley, chopped (or 1/2 tablespoon dried)
1 teaspoon ground pepper
1/2 teaspoon sea salt
1/2 teaspoon dried dill
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon dried thyme 

Directions
1. Whisk the yogurt and milk together until well combined.
2. Whisk in the parsley, following by the remaining seasonings.
3. Store in the fridge in an glass jar for an hour to set before serving.
4. Shake  the jar well before using.
5. Will last for at least a week in the fridge (will depend on the best before date on the yogurt)

Quick and Easy Tartar Sauce Recipe



Quick and Easy Tartar Sauce 

Ingredients
1 cup mayonnaise
1 1/2 tablespoons sweet green relish
1 teaspoon lemon juice
1/2 teaspoon yellow mustard

Directions
1. Combine all ingredients thoroughly using a whisk.
2. You can use this right away and it will taste great or you can let it chill in the fridge for a while so the flavors deepen.

National Strawberry Parfait Day - Recipe





On these hot summer days we look for some cool refreshing snacks to eat. A cool Strawberry Parfait is a great snack to have during these hot days. As a kid we are always looking for new delicious snacks to get. This recipe and snack is also good for you but also has a sweet kick to it. Give it a try it may just hit your sweet tooth. This is my princess getting eating her first strawberry.



Strawberry Parfaits

Ingredients
4 cups sliced strawberries, divided
1/4 cup granulated sugar
1 cup fat free ricotta cheese
1/2 cup (4 ounce) 1/3-less-fat-cream cheese, softened
1/4 cup powdered sugar
1 tablespoon water
1 teaspoon water
1 teaspoon vanilla extract 
1 cup amaretti cookie crumbs (about 8 cookies)
1/2 cup frozen reduced-calorie whipped topping, thawed
2 tablespoons slivered almonds, toasted 

Directions
1. Place 2 cups of strawberry slices and granulated sugar in a blender or food processor, and process until smooth. Set strawberry puree aside.
2. Combine ricotta and next 4 ingredients (ricotta through vanilla) in a medium bowl; stir well with a whisk.
3. Spoon 2 tablespoons cookie crumbs into each of 4 parfait glasses.
4. Top each potion with 2 tablespoons strawberry puree, 1/4 cup strawberry slices, and 3 tablespoons ricotta mixture; repeat the layers. 
5.  Drizzle the remaining strawberry puree over each serving.
6. Chill for 2 hours. Top each parfait with 2 tablespoons whipped topping and 1 1/2 teaspoons almonds. 


National Catfish Day



Catfish is big in the Illinois. We like going fishing for catfish. I am hoping to take my monkeys catfishing this year. We have had family gatherings around fish fries which was made with catfish. They are very delicious.


Southern Fried Catfish 

Ingredients
1 quart peanut oil
1 cup stone ground fine cornmeal
1 cup all purpose flour
1 teaspoon seafood seasoning 
1/2 teaspoon kosher salt
1/4 teaspoon hot smoked paprika
1/4 teaspoon freshly ground black pepper
6 (7 to 9 ounce) catfish fillets, rinsed and thoroughly patted dry
3/4 cup low fat buttermilk

Directions
1. Heat the peanut oil in a 5 quart dutch oven over high heat until it reaches 350 degrees on a deep fry thermometer. adjust the heat to maintain the temperature.
2. Whisk the cornmeal and flour together in a shallow dish. Combine the seafood seasoning, kosher salt, paprika, and pepper in a small bowl. 
3. Season the catfish fillets evenly on both sides with the spice mixture. Pour the buttermilk into another shallow dish. Dip each fillet into the buttermilk. Flip once to coat both sides. Hold over the pan and allow the excess to drip off. Coat both sides of the fillets in the cornmeal mixture. Set the coated fillets on a cooling rack and let rest for 5 minutes. 





National Bomb Pop Day



Today is National Bomb Pop Day! I so remember these as a kid. My mom and dad used to buy these for me and my brothers and sisters. I loved them because as they melt there is different flavors. But oh what a mess! There are some many different flavors now to choose from. But now I have to watch my weight and watch what I eat so today I will be giving my kids a Bomb Pop and I will be mixing me a drink that tastes just like a bomb pop today.




Bomb Pop Shots

Ingredients
1/3 ounce sprite 
1/3 ounce lemon vodka
2/3 ounce blue curacao
2/3 ounce grenadine
Ice
*** Can use Mikes Hard Lemonade or Smirnoff Ice in place of these
Shot glasses 


Directions
1. Mix the sprite and vodka in a shaker with some ice to chill it.
2. Strain into glass
3. Using a spoon turned upside down angled into the vodka mix just to slightly break the surface, very slowly pour the blue curacao. It must be done with patience, or the two will mix and you wont get the same effect.
4. Next add in the grenadine. The easiest way to do this is to pour close to the edge of the glass to create an almost waterfall effect inside the glass. Since the grenadine is so thick it'll drop to the bottom of the glass

Red, White and Blue Ooey Gooey Bars

With the fourth of July coming around the corner I am always on the look out for some kid friendly recipes to make. I have found one recipe that is very colorful and look so yummy. Can't wait until I taste these!


Red, White and Blue Ooey Gooey Bars
 
Ingredients
1 white cake mix
2 eggs
1/2 cup oil
blue get food coloring
2 (7oz) container marshmallow cream
3 tablespoons butter
6 cups mini marshmallows
Red no-tasted gel food coloring
6 cups Rice Krispies
 
Directions
1. Mix together a white cake mix, eggs, oil and blue gel food coloring. Press into a greased 9x13 pan and bake at 350 degrees for 10-13
2. Remove from the oven and top with marshmallow cream. As the marshmallow cream warms it will start to spread. Carefully spread it out over the cake mix crust.
3. In a large bowl, melt butter in the microwave. Add mini marshmallows and stir to coat. Microwave for an additional 30 seconds.) Add some red gel food coloring and stir until the color is even. Mix in Rice Krispies and gently stir until well coated. Drop by large spoonful's over the marshmallow cream layer and carefully spread out evenly. Finally, Firmly press the top layer down into the marshmallow cream to really hold things together. Cover the bars and cool completely in the fridge.
4. Before serving, remove from fridge and use a star shaped cookie cutter as a template for cutting out the stars.

3 Ingredient Peach Cobbler

Its getting that season when all the fruit are fresh and ready to be picked. Here is a easy recipe for you to make some Peach Cobbler without all the hassle.



3 Ingredient Peach Cobbler
 
Ingredients
1 box of yellow cake mix
1 (29oz) Large can of peaches
1 stick of butter
 
 
Directions
1. Preheat oven to 350 degrees.
2. Spray a 9x12 casserole dish with pam.
3. Dump can of peaches into the casserole dish the whole can even the juice.
4. Pour the cake mix on top. Smooth it gently with a knife (or a spoon, or a fork or your fingers) DONT MIX IT
5. Cut the butter into thin slices and then spread it evenly on the cake mix.
6. Bake for 30-40 minutes.

Cinnamon Bread




Cinnamon Bread 

Batter:
1 cup butter, softened 
2 cups sugar
2 eggs 
2 cups buttermilk or 2 cups milk plus 2 tablespoons vinegar or lemon juice
4 cups flour
2 teaspoons baking soda

Cinnamon/Sugar mixture:
2/3 cups sugar 
2 teaspoons cinnamon

Directions 
1. Cream together butter, 2 cups of sugar, and eggs.
2. Add milk, flour, and baking soda. 
3. Put 1/2 of batter (or a little less) into greased loaf pans (1/4 in each pan). Mix in separate bowl the 2/3 cup sugar and cinnamon.
4. Sprinkle 3/4 of cinnamon mixture on top of the 1/2 batter in each pan.
5. Add remaining batter to pans; sprinkle with last of cinnamon topping. Swirl with a knife. 
6. Bake at 350 degrees for 45-50 mins. or until toothpick tester comes out clean. 
7. Cool in pan for 20 minutes before removing from pan.




National Pralines Day - Recipe


Today is National Pralines Day. In history they were original praline was roughly made from a sweet confection made of almonds and some sort of creamy sugary caramelized coating. The candy was formally named Praslin. Modern day times its called Paralines the recipe below is a easy recipe to make pralines.




Creamy Pecan Pralines 

Ingredients
1 cup light brown sugar
1/2 cup granulated sugar
1/2 cup heavy cream
4 tablespoons unsalted butter
2 tablespoons water
1 cup pecan halves

Directions
1. In a heavy-bottomed saucepan. Combine the light brown sugar, granulated sugar, heavy cream, butter and water. 
2. Place over a medium high heat and stir constantly until the pralines reach the softball stage. 238 to 240 degrees F. 
3. Continue to stir the candy vigorously with a wooden spoon until the candy cools. and the pecans remain suspended in the candy. about 2 minutes. 
4. Spoon the pralines out onto a parchment or aluminum foil lined sheet pan and cool completely before serving.
